Back-of-the-house or house staff was further divided into two groups: the kitchen team, which included the executive chefs, sous chefs, demi-chefs, chefs de partie, apprentice chefs and dishwashers; and the supervisory team, which included the restaurant managers, assistant managers and supervisors.
